I texted my wife’s phone and she never got
them. We later realized they had gone to her iPad, instead of her phone. How can I be sure my texts go to my wife’s iPhone?

Look in the Settings app. Look for Messages in there. In the Messages category, look for "Send & Receive." This will give a list of all of the phone numbers and email addresses that the iPhone uses to receive messages. Make sure that you are sending to one of these. Or, perhaps just check both the iPad and iPhone and make sure these lists match.
