I want the notes app to add the next list number when I hit the return button. I know there’s a video on how to do it just can’t find it.
Example.
School Supplies
1.Pencels
2.Pens
Then when I hit return the number 3. Will automaticly show up.

I'll assume you mean in the Mac app, not the iOs one.
All you need to do is go to the menu bar and choose Format, Lists, Insert Numbered List. Then you can start typing each item and hit Return between them. The numbers appear automatically. You can also insert items in the middle of the list and the numbers will adjust.
No I mean on a iOS, I did it on my iPhone once before but don't remember how.

I'm pretty sure there is no way to do numbered or bullet lists in the iOS version of Notes.
Better to use Reminders. Create a new list and add each item as a separate reminder within that list.
It's probably better to go with a third-party app, though. Errands is free (fully functional but a "donation" unlocks extra functions) and the best to-do and list app I've tried, with the exception that it doesn't sync with anything on my Mac.
If you start a numbered list in the Mac Notes app, then switch to iOS the numbering will continue in Notes on your iOS device. .
Actually, I tried that with no success.
