I’m trying to figure out the following. Am I able to purchase a wireless camera and see its video signal on my macBook. I would then like to take photos with it at set intervals.
What I’m trying to do is advance my little stop motion studio.

That totally depends on the camera. A wireless camera would need to come with software or drivers -- that's what you would use.
You use Image capture when you have a camera plugged in.
