Gary if an iMac hard disk is partitioned for Mac is lion and windows boot camp, can I delete the windows partition through disk utility and make it all just one hard disk, without affecting the applications and data on the Mac hard drive?

A Boot Camp partition is a special type of partition and is different than a regular one. Do not try to use Disk Utility to do delete it. Instead, use Boot Camp Assistant to do it.
...and be sure to create a full backup of your non-Boot Camp partitions before you begin. Nothing *should* go wrong, but repartitioning a "live" drive is the most risky thing you can do to your data on purpose.
