I am trying to use an old iPhone as a video camera, which worked fine. However, I can’t get the video off of the iPhone now. How do I do this? Thanks so much!

Many ways. First, you need to be connected to Wi-Fi. I assume you have that. Then you can sign on to iCloud and use iCloud Drive. Just save the videos to iCloud Drive and they will appear on iCloud Drive on your Mac on iCloud Drive as long as they are using the same Apple ID.
You can also use AirDrop to send a video from the Photos app to your Mac.
You can also connect your iPhone to your Mac too, and then use Image Capture to grab any photos or videos from it too.
