I assume you mean in the Audible app, right? Just look at your list of books, swipe right to left across the book in the list, and tap the Delete From Device button.

I have done what you suggested...BUT they just go to "the cloud" and stay there forever??? so they are not really DELETED --except from my device.side of my I phone---so I guess thats it !!!
Kay: In the Audible app? That's right then, you still see them in your library, but the files are not on your device. With Audible, any book you buy is yours to listen to again any time you want.
They ARE deleted from your iPhone. You just have the ability to tap them and download them again. There is also a switch at the top of the list where you can view "Cloud" or "Device" -- the first shows you all of your books, the second only the ones on your device at the moment.
