Two separate things.
To update your iPhone 3G, plug it in to your Mac. Run iTunes. Select the iPhone on the left and then you should see options under "Summary" to update it.
Transferring your music from your iPhone to your computer is a different thing. It typically doesn't work that way. If you have purchased music from iTunes and it is only on your iPhone, then you it should prompt you to transfer your purchases when you first sync. Otherwise, the only way to get music on your iPhone was to transfer it FROM your computer. There's no way to go back.
