My mid 2011 iMac is running like a slug. Yuck. It might be time for a new one. Do you know if Apple has plans for a new updated iMac? I don’t want to buy a new one and then have them come out with an updated one in the near future.

I don't have any insider information or anything like that. The best thing to do is to look at when they last came out with models (March 2019) and also how often they usually release them (1-2 years). MacRumors keeps track of that stuff (https://buyersguide.macrumors.com/#iMac) Or you can look at the Wikipedia page for some information.
Then you have to make a guess. But also keep in mind that not all updates are the same. Sometimes it is just a modest change. Other times it is a major redesign.
Of course you can always wait. Even after an update, you can still wait as you never know. Some people prefer to buy a model when it has been out for a while too, and tested by millions, rather than a model that just came out. So there is that. Personally, I buy when I need and don't worry too much about rumors and new model releases.
