I was thinking about editing my bookmarks – they seem to accumulate like dust bunnies – and i thought one way to choose elimination would be to know I hadn’t visited a site in months or years. Any way to do that quickly and easily?

No way to do that as that data isn't stored with each bookmark.
You probably should choose a different strategy.
I stopped using bookmarks completely. I put about a dozen sites in the bookmarks bar an use them. But for anything beyond that I simply search my history. Your Safari history can be like a bookmark list of every page you go to -- just use search to find something.
