One of my favorite ‘Snow Leopard’ things was entering ‘Spaces’ and then ‘Expose’ – at the the same time. With 4 spaces this showed me every window on every space and was awesome. I like ‘Lion’ but am looking for this feature. I can show all applications on a single ‘Desktop’ in ‘Mission Control’ but the other ‘Desktops’ are too small and the windows on them are not differentiated. Any idea how to do this with Lion?

I don't think you can do that anymore. You can swipe quickly between desktops in Mission Control, but not mix them all together.
After playing around with Lion a bit more, I do like the gestures. Two finger double tap to start Mission Control and then Two Finger Swipe to move from Desktop to Desktop. I still would like my files from the same app differentiated though. Is there a way to change the names of the Desktops in Mission Control? What about a way to change the Background color (from Grey) in Mission Control?
No way to name the desktops or change the background color as far as I know.
There is a way, check this link.
