When I attach a pdf to an email it it will not show as an attachment. It seems that this happens only when I add a signature to the email. Windows receivers can see that the email contains an attachment but cannot open it. Mac receivers can access the file from the preview, but it is not possible to open the attachment directly from the mail. Is there something I can do to resolve this issue?

I haven't observed this myself. How are you adding the signature (with the new Preview feature?) How are you saving the Preview document? Have you tried Exporting it from Preview instead of just saving it?
I add the signature to the email by choosing it from the address fields in the mail. I can save the document by using the bottom for this in the preview feature (but this option is not available for Windows receivers). I'm not sure how to Export in from Preview
Ah, OK. Confusion. I thought you were asking about the new feature in Preview where you can add a signature (literally a hand-written signature) to a document.
Adding a normal email signature, which is just an additional piece of text, shouldn't affect the attachments.
But there are several people complaining of similar issues in the Apple discussion forums. Search there for "lion email attachments windows."
Have you tried setting the message to "plain text" rather than "rich text." That may fix the issue.
