Safari 5 Change Google Search Language?

I am trying to use Safari (have always used Firefox). I have two questions. When I use the Google search that is in the toolbar, it is in French. I can’t find a way to change it.
2nd question. I would like all pages to open in a new tab. I’ve changed preferences to automatiCally open in tab, but they still overwrite the page I am on. How do I do it?

That's odd. Are your language and location settings in System Preferences set to french/France? Check those first. Look around on the search results page for a way to switch to english. It may have nothing to do with Safari -- it may be Google giving you search results in french because it thinks you are located (by your IP address) in France. Try to see if forcing it to switch to english will stick.
The preference is for opening in tabs instead of windows. So that doesn't change normal links, that just changes links that would normally open a new window.
You don't want to change every link to open in a new tab. Then simply navigating a few pages on a web site would mean each link would open up a new tab. You'd have dozens or even hundreds of tabs open in no time.
But the way you click a link can force the link to create a new tab. Command+click on a link to do that. You can see all similar shortcuts in the Safari, Preferences, Tabs settings.

I found one preference setting that would let me add English, but it didn't change all of the "instructions", they stayed in French. If I go to Google, I get English. But, if I use the search in the tool bar, I get French. I changed to Yahoo and it's in English!
I've never used anything but Macs starting with an Apple GS, but Safari has never felt intuitive. I just want to have several tabs across the top of the screen with the sites I go to all the time. I discovered the plus to the right, but Firefox does this automatically and that's what I'm looking for.

So you want Safari to start off with several tabs open, all going to preset sites? You can do this. But you can also use Top Sites which I think is nicer. Look into that.
You can create a folder of bookmarks in the bookmarks bar, and then choose to have them all open in tabs. There are lots of options and lots of ways to configure it. It sounds like you are just used to how Firefox works, but Safari can do a lot of cool things too.

Does Andrea have the System Preference>Language & Text> Language with French sorted to be at the top?

I have used Safari all the time. I briefly had a go with Firefox, but i found it was to cluttered with add on`s. I have Google has my second web browser, but i still find Safari more user friendly. Also i have learnt a lot about Safari on this site. Thanks to Gary`s Videos.
