I have 4 different email accounts that I set up in my Mac’s mail to receive. They are all jumbled in there together. The same 4 are on my iPad and iPhone and I can choose which account I want to look at. I don’t see how to do that on my iMac. Can this be done? How?

On your Mac, like on the iPad, you can look at your "unified" Inbox, or an individual inbox.
The way it works on the Mac is you should see your Inbox in the left sidebar. If you don't see the sidebar, turn it on by going to View, Show Mailbox List.
Then you can select the Inbox to view all the mail in all 4 inboxes. But you can click on the reveal triangle to the left of the word "inbox" to see each inbox listed individually. Select any one to focus on just the email in it.
Likewise, if you don't want to use the sidebar with the mailbox list, you should see an Inbox item in the Favorites bar at the top. Click and hold that to reveal a list, starting with All Inbox, and then listing each one separately.
That’s all well and good, but I almost exclusively use gmail and if I try to send a message from Mail it only allows me to choose from one of my two @me.com aliases. It will not let me choose from my gmail aliases which are all showing as incoming mail and are synced. Hints? It’s driving me crazy.
Sounds like something isn't set up correctly. Try removing and adding your Gmail account in System Preferences to see if that helps.
