You can't just put anything you want in there. An app has to be programmed to work with Apple's Wallet system. So an app, like a ticket purchasing app or ID card app would need to be developed to work with the Wallet app.
You can, of course, store a scan of your vaccination card on your iPhone in various ways. I even did a video on one method that uses a Shortcut to bring it up even faster than if it was in the Wallet app.

Bull. I have is 15.1 and can’t easily add stuff like vac cards and driver’s licenses to the wallet. What good is it?
Although it says that with 15.1 I should be able to put my Drivers License into my iPhone Wallet, I cannot. The + on the wallet screen gives me: Apply fo Apple Card; Debit or Credit Card, Transit Card options. I looked and none of these work. What id the deal? Can I or can’t I?

Lydia: Depends on your state. You'll need to go to your state's website, and probably download your state's app. to enable this.
It would be so helpful to have emails, photos, travel visas, etc. easily accesible together in one place.

Shauna: Possibly. All of those are issues by official sources like your state (assuming you are in the USA). So it would be up to your state to set this up. In my state, for instance, they have a separate official app where I can find my license. But other states may use the Wallet app or a combination of the two. Check with your state government site to find out what is available.
