There is no easy way to do this. Security on the iPhone will naturally prevent an app from listening in on your phone calls, so an app can't help you.
You can use a different phone service that provides this as part of the calling system. I think you can use Google Voice to record incoming calls. But the call has to be through Google Voice, not your iPhone's line. Other apps do something similar, but they are through their system and you have to sign up for some sort of phone service through them.
