I use Apple Mail. I used to use Outlook. I miss many of the Outlook features, e.g., when replying to an email, any interlineating in the original text would result in an automatic different color, preceded by the name of the editor. It would also quote the prior text and show all headers (To and CC’s). Mail doesn’t do that. It also is skimpy on formatting, using color, highlighting, etc. Are there plugins that can help emulate Outlook features like this in Mail? I miss Outlook, but Mail’s integration with the rest of the Apple applications like Address Book is too elegant to give up.

I don't have a good answer for you, since I don't use any Mail extensions myself. A search for "apple mail extensions" turns up a lot, though.
Maybe someone else can chime in with some suggestions or recommendations.
Version 6.3 of Mail controls most of what you asked for in Mail>Preferences>Composing.
