How Do I Do Voice To Text?

I have an Mac with Mojave . I wish to do voice to text. I want to write about adventures I have experienced during my 81 years here, and my typing speed is so frustratingly slow. I am told that software exists to achieve this.

You don't need any special software to do this. You can use the built-in functionality of macOS Mojave to speak and have your words transcribed to text. It isn't perfect, and no software that does this is. But if you spend the time to get used to it, you can go pretty far. I find the best way to use it is to combine speaking and typing. For instance, you can use the keyboard to type last names or difficult words, and use the delete key and cursor selection to do edits as you speak.
