I had a problem a couple of years ago with email trying to use contacts that came from emails form the outside even thought they were NOT in my contacts list. An Apple person walked me thought it but I cannot remember the steps. I think it had to do with removing “recents” but not sure. All help is appreciated.

I assume you mean on a Mac. In the Mail app, go to Window, Previous Recipients. Search for the offending email address there and remove it from the list.
