Saving a file to the desktop on a Mac isn’t available any longer, it’s save to the iCloud desktop. Is there another way to save something to my desktop?

If you are using iCloud Drive then "iCloud Desktop" IS your desktop. That folder is one and the same. So I'm not sure what you are asking. If you aren't using iCloud Drive's "Desktop & Documents" option, then you have a local Desktop folder like before and nothing has changed.
To put it another way: If you have iCloud Drive's "Desktop & Documents" option turned on, then your Desktop folder is on your iCloud Drive. If you have it turned off, then your Destkop folder is on your local drive in your User home folder. Either way, you can certainly save a file there.
