I’ve created a Keynote presentation of around 85 slides, with all the text inside it in Times New Roman size 12. I want to create an alternate version with the text in Helvetica, size 14. Is there a way to change the font type/attributes across all the slides with one command or will I have to go slide by slide?

Try changing the font in the Master Slides. This should change it in all the dependent slides, unless you have manually overridden the fonts in those fields.
Then, check each slide to see if you need to do any clean-up or individual font changes.
