I noticed on Apple’s site that the desk spaces all have different names like mail, pages etc. All get is desk top 1,2,3 etc. How can I name them myself?

Mission Control spaces are named either Desktop, Desktop 2, etc. OR, they are named for the full-screen app that "is" the space. So those spaces named "Mail" or "Pages" are simply those apps running in full-screen mode.
