It would be great to know how this all works! Create an new event in iCal, invite people to a meeting, appears in iPhone but cannot be altered and I am not sure how it works in MobileMe.

Not sure what your question is. Are you trying to figure out how to alter an invitation set to your iPhone? I don't think you can since it would be up to the event creator to change the meeting.
Question. I'm running iOS6 on an iphone4 is there a way to invite people to events? If so how do I utilize this function?
Yes. Edit the Event. Then look for "Invitees." Tap that and add some.
