When starting a new email and when I begin typing the recipients email address in I want to delete one of the addresses that comes up in the list of choices.

Those addresses come from two places. First, check your Address Book and make sure that email address is not listed for any contact. Sometimes contacts can have more than one email address.
Second, in Mail go to Window, Previous Recipients. Search for the address in there and delete it.

How do you delete an email address in a list that comes up when starting a new email on the iPad? I was able to do it going to windows on my iMac email screen but I can't figure out how to do it on my iPad?
If the email is in the "previous recipients" list and not a contact, then there is no way to clear it. You just have to ignore it.
