I have a HD video camera and have been importing my video in HD format, however, I am filling up my external HD’s. Should I be importing the video in the large format instead? When exporting? sharing do I use export movie or Quicktime?

There is no "right" way to do it. There are a lot of options, and each fits a different need. You can import in a lower quality if drive space is more important than quality. Using "QuickTime" to export simply gives you more options. If you don't need something specific, then use the regular Sharing options.
Perhaps consider buying an external hard drive and archiving some of your iMovie events and projects to it.
