Opening Excel on my Mac

When I open an excel document on my computer, previous excel documents open as well. I have several document open at once and when I begin to close the documents I do not need, the entire excel program closes. I can minimize each document and work on the one I need.

How can I open just one excel document at a time

    That's odd. I would try some things. Try running Excel without opening up a document -- just run it. Then see if you can close those documents. Maybe close one, then quit. Then run again. Things like that.
    If that doesn't work, then you may want to find the Excel preferences file and delete it. See if that stops it from opening those documents.
