I just installed Pages ’09 on a new system, and somehow the default template blank doesn’t have any columns and won’t allow me to create one. It’s blanked out. So the only way I can actually type is by making a text box.

That's very odd. I've never heard of an issue like that. Are you sure you just aren't in a different view that doesn't show the default text area? Play around with it.
If you are sure that it is broken, then I would just re-install iWork.
Ha! I was opening the page layout template and not the word processor template. I didn't even know there was a page layout template!
