I’ve been trying to create a table of contents using Pages. I select a piece of text, I apply a style to it, then I go to “Insert TOC”, and it tells me that it can’t create a TOC.

Have you checked out the Help page in Pages for "Creating and Updating a Table of Contents?"
I don't have anything to add that isn't on that help page.
Hello I am Emmanuel and I am writing an essay for my studies. I love apple so I choose to do the essay on pages.
I can create the table of contents but I can't shape it the way I want or the way you can find it in other predefine template.
ex : on the same line, the number of your paragraph, the name of your paragraph then at the end of the line the page it is in.
For ex : 1/Introduction 1
Can you tell me how to shape it that easy?
Hard to help because I'm not sure what you are looking for exactly, But you can style and customize the TOC. I suggest creating a duplicate of your document. Then use that duplicate to experiment and play around with styles and layout in your TOC. Go through all of the controls in the inspector, toolbar and menu items. See what you can do. Then after you get the hang of it, try to modify the TOC so it looks like you want.
I solved it.
For some reason I had to create the TOC above the text.
