I was wondering would you please explain to me in a easy way that I can understand: what does a security update actually do to the computer?

    It depends on the update. A security update would contain some update to the code of some part of the operating system or some app that patchs security flaws. So before the update, there was some part of the code that was determined to be weak and could possibly lead to a malicious hacker developing something that could be a security threat. After the update, that old code was replaced with new code to plug that hole.
