I use a music program called Sibelius. With it you can scan in a music score, add instruments and play it back. I however can only save it as .sib or .aiff format. I want to create a movie showing the score as it plays back to use as a teaching tool. I can’t find a program to do this, BUT I did it once 2 years ago, I just can’t remember what I did! When I play back the score in sibelius it shows the show with a moving line to show the notes it’s playing. Is this something that Quicktime Pro could do?

This is something QuickTime X (Snow Leopard) can do, yes. Just record your screen while playing the song back it will record whatever is going on.
