How Can I Create My Own Zoom Percentages In Numbers Outside of the Defaults?
For example 105%, 110% 115%, etc.
To use a specific zoom % to get the spreadsheet to fill/fit the full screen without scrolling.

You can't add custom amounts there.
But you can:
Use Edit, Select All (Command+A).
Then View, Zoom, Zoom to Selection (Shift+Command+0).
