System Preferences, Security & Privacy, General. There you can set "Require password" for various times "after sleep or screen saver begins." So factor in your sleep time in System Preferences, Energy Saver/Battery too.
I would only set this to something higher than 5 seconds if your Mac is in a secure place, like your home or a private office. But if that is the case, then setting it to 15 minutes allows you to step away from your Mac for a while and then come back without needing to enter a password.
