The best way to do this is to open a new Finder window and then use Command+F to search. Don't enter anything into the search field if you want a list of all Numbers files.
Then you'll see a "Kind" is "Any" as the default criteria. Change "Any" to "Numbers." If you don't see Numbers, which is likely if you have never done this search before, then choose "Other" and then type "Numbers."
Now you'll get a list of all files with "Numbers" as the Kind.
