There is talk that the new Office for Mac will arrive this year. Apparently Entourage will be replaced by a version of Outlook for Mac.
If so will it easily and painlessly import all my old Hotmail emails into Mail??

Not sure what you are asking. I don't think changing the name of Entourage to Outlook for Mac will have any affect on whether you can use Apple Mail with Hotmail.
Outlook in a PC can easily import from a hotmail account. Entourage is very difficult. I just thought the new version might be like the PC Outlook. Guess we just have to wait and see.
