I’ve created a “how to” manual and have lots of pics on it in a pages document. When I go in and add/remove whatever with texts and paragraphs the pictures move. It messes everything past that up and drives me nuts. I’m a beginner, so any help would be appreciated.

It sounds like you have the images set to "Move With Text." To change it to "Stay on Page" select the image(s) and click Format on the top left to bring up the format window. Then select Arrange to go to the Arrange controls. You can toggle between these two choices at the top of this sidebar.
I'd suggest the next time your create a "how to" manual you start with Page Layout then you will not have this problem. Open a new Pages document, go to the File Menu and choose Change to Page Layout. From then on place your text in TextBoxes and this will not happen as in Page Layout, Arrange is set to None.
