Not that it’s a serious problem or anything but I’d like the default first slide in any them in Keynote to be Blank, instead of the Title and Subtitle slide that always pops up? Is this easily customisable?

Very easily done. Just choose View, Show Master Slides to see them all. Then look for the one with the checkmark next to it. That is the default slide. Select it and then delete everything from it. (You can duplicate it first if you want to keep it as a non-default master slide choice).
